Spicy Turmeric broiled Tilapia

My super speedy take on a classic Bengali comfort dish.  Its exam time and I need food that reminds me home and my mom’s cooking.  Here it goes, pay close attention because it is so easy you might just miss it !!!!

Pat dry 1lb of fresh tilapia. Season the fish with salt.

 

In a small bowl, whisk together 1tsp turmeric, 1tsp of cayenne pepper, 1tbsp of lime juice and 1/2 tbsp of olive oil.

Pour the marinade over the fish and let it sit for 10 mins–while you preheat the broiler to 450F

Sprinkle black cumin seeds and paprika over each fillet and broil till cooked through-about 10mins.

Enjoy with some warm basmati rice !

Sweet and Spicy Citrus Tilapia

Yes, I admit it, I am hooked on to pinterest.  So when I came across a new tilapia recipe I just had to make it.  It is different, fresh and yummy !

Ingredients:

4 (6-ounce) tilapia fillets

Cooking spray

1/2 cup fresh orange juice (about 1 orange)

3 tablespoons fresh lime juice

1 tablespoon brown sugar

1 tablespoon extra-virgin olive oil

2 teaspoons lower-sodium soy sauce

1/2 teaspoon salt

1/2 teaspoon ground cumin

1/4 teaspoon black pepper

1/4 teaspoon ground red pepper

2 garlic cloves, crushed

1/2 teaspoon paprika

Method:

1. Arrange fish in a single layer in a shallow roasting pan coated with cooking spray. Combine orange juice and next 9 ingredients (through garlic); pour over fish. Let stand 15 minutes.

2. Preheat broiler.

3. Sprinkle fish with paprika; broil 15 minutes or until desired degree of doneness. Drizzle sauce over fish.

Cashew crusted Tilapia

Another nutty rendition for a humble fish.  As you all might have figured out by now, I love fish and I will search high and low to find variations in a fish recipes.  This one comes from the same New England cookbook that I got at Newport, RI (refer to previous post on Parker house scrod).  There was an additional sauce to this meal, it was a rum butter sauce, but I decided to keep it heathy and just have a side salad.  Cashews are rich and buttery anyway.  SO this is what you will need.

Ingredients:

Tilapia fillets, the fresher the better–try not to use the frozen ones for this recipe.

eggs, flour, salt and pepper for the breading station

Crushed cashews, enough to coat you fish.

Method:

Pat dry the fish fillets and dip in flour (seasoned LIBERALLY with salt and pepper) and then move on to  the egg wash.  I season the egg wash too.

Then dip the fish in the crushed cashews.

Bake in a 375F preheated oven till the crust is golden and fish is cooked through.  My fillets were pretty thick, so it took 20 mins–cook time will vary according to size of the fillets.

Serve hot with your choice of side !!

Note: I know I did not include precise measurements for the ingredients, but as you can see, it is a basic breading station so the amount eggs, flour etc needs to adjusted/estimated according to your taste and amount of fish you are cooking.

Tarragon Tilapia in Lemon-Caper White Wine sauce

A light delicious fish entrée, simple enough for a quick-lunch yet elegant enough to be the star of a dinner party.  Serve it family style with a side of rice or plate it up with a fresh salad–this is a sure shot hit !

Ingredients:

1 lb of Tilapia

1 medium-sized lemon

1 Tbsp of drained capers

1/2 Tbsp of Tarragon

Salt and Pepper to taste

A splash of good white wine, use what you would drink-ALWAYS

Method:

Preheat oven to 350.

Spray a baking pan ( use one where the fillets will fit nicely) with cooking spray arrange the fillets.

Season liberally with sal and pepper.  Add lemon zest, tarragon and sprinkle the capers.

Arrange a few lemon slices over the fish and add a splash of white wine, just enough to cover the bottom of the pan, DO NOT submerge the fillets  in it.

Bake for about 15 min till the fish is cooked through and then broil for a the last 2 min to give the fillets a light golden brown crust.

Serve warm with your choice of side.

Quick Dinner

Dinner for two

Yesterday “the boy” and I celebrated 4yrs of dating.  What did we do? We cooked dinner because he wanted to take pictures of me cooking and put them up here. On the menu we have oven baked Tilapia served on a bed of pan sauted Zucchini and Summer Squash.  Also, this is my first recipe with the Zucchini that I got on sale a few days ago.  More Zucchini recipes to follow.  In the meantime, I or we share with you our Anniversary Dinner.

Ingredients

~1 pound of Tilapia

1/4 cup of Italian style bread crumbs

2 tsp of olive oil

2 zucchini

2 Summer Squash

2 Tbsp of Italian style dipping oil (the seasoned oil you get at the grocery for dipping bread)

Salt and pepper for seasoning

Method:

Slice the zucchini and squash into 1/4″ inch thick discs.  Do not slice them too thin because they will wilt and melt during the cooking process.

Heat 2 tbsp of the dipping oil in a saute pan and add the zucchini and squash.  Saute till tender.  Season with salt and pepper at the very end.

The veggies will take a while to cook which is enough time to work on the Tilapia.

Preheat oven to 350F

Rinse and pat dry Tilapia fillets.  Arrange on a greased and lined baking tray.

Season both sides with salt and pepper.

Brush top side with olive oil and press the bread crumbs on to the fish.

Bake for ~15min till the fish is white and flakey in the middle.  The veggies should be done by then.

Divide the veggies onto two plates and serve the fish on top of the veggies.

And then we ate !
